Family friendly, quick, easy, nutritious, tried and tested.

Makes 4

-1 large avocado/2 small, mashed

-1 1/2 cups red cabbage, thinly shredded

-4 large burrito-sized tortillas
, or smaller sized – or taco tortillas

-1 1/2 cups cooked rice

-1 pack organic firm tofu

-1 tbsp ghee/butter/olive oil

-1/2 onion chopped finely

-4 tbsp nutritional yeast

-1/2 teaspoon turmeric

-1/2 teaspoon garlic powder

-2 tbsp oat milk

  1. Drain the tofu and squeeze dry with a paper towel

  2. Soften the chopped onion in a pan with the oil

  3. Add the nutritional yeast, turmeric, oat milk and garlic powder

  4. Add the crumbled tofu and stir until combined

  5. Allow to cook through and while you're waiting begin to cook the rice

  6. Lay out the burrito tortillas and fill with the tofu mix, avocado, rice and cabbage

  7. Enjoy!
