Spinach and feta filo pie

Family friendly, quick, easy, nutritious, tried and tested.

-200g spinach (doesn't need to be exact)

-150g feta cheese

-2 eggs

-4 sheets filo pastry

-Olive oil

  1. Set oven to fan 180 degrees c

  2. Add about 2cm of water to a large pan and boil

  3. Add the spinach to the pan and allow to wilt

  4. Once wilted drain the water away and once cooled enough-finely chop the spinach

  5. In a bowl or the same pan mix the eggs, crumbled feta cheese and spinach together

  6. Brush some oil over one side of a filo sheet

  7. Place the sheet face down in a round cake tin so that it hangs over the sides

  8. Repeat steps 6 and 7 for the other 3 sheets of filo (place them at different angles so that you have them roughly covering the whole circumference of the cake tin)

  9. Add the spinach mixture into the prepared filo cake tin

  10. Fold the edges of the pastry inwards to form the pie so that the contents are enclosed

  11. Place in the oven for 20-25 minutes

  12. Enjoy!
