Pistachio and matcha energy balls

Family friendly, quick, easy, nutritious, tried and tested.


-1/2 cup pistachios

-1/2 cup sunflower seeds

-1/2 cup shredded coconut

-10 pitted fresh dates

-2 tsp matcha powder

-2 tbsp coconut oil (solid state)


  1. Place all the ingredients into a food processor and blend well

  2. You will need to stop at intervals to scrape down the sides

  3. Roll into balls around 1 tbsp in size each

  4. Store in the fridge up to 5 days or in the freezer

  5. Enjoy!
