Pink pesto pasta sauce

Family friendly, quick, easy, nutritious, tried and tested.


-1 cup of chopped red beets (you can buy pre cooked to save time)

-4 cloves of garlic smashed

-1/2 cup almonds/walnuts

-1/2 cup grated parmesan

-10 fresh basil leaves

-Juice of 1/2 lemon

-2 tbsp balsamic vinegar

-1/2 cup olive oil

-black pepper


  1. In a food processor add the beetroot, lemon, balsamic vinegar, garlic, walnuts/almonds, parmesan, black pepper, basil and combine

  2. Drizzle in the olive oil and mix again

  3. That's it! I told you it was quick and easy

  4. Heat it by pouring over the freshly cooked and steaming pasta

  5. Enjoy!
