Creamy cashew dressing (versatile, easy, no fuss)

Family friendly, quick, easy, nutritious, tried and tested.


I use this not only on salads but also as a dip and as a topping on many other dishes plus it's a great nutritious boost to a meal.





-A couple of big handfuls of raw cashews

-Water

-Lemon x 1

-Low sodium tamari sauce

-Garlic x 1 clove

-Fresh coriander (about a handful/to your taste)


  1. In a blender add the cashews, enough water to cover them, juice of one small lemon or 1/2 a large lemon, a splash of tamari sauce, garlic clove peeled and the coriander

  2. Blend until smooth

  3. If it needs more sour, add lemon, more salt or richness, add tamari, more creaminess, ad cashews or more liquid, add water

  4. Enjoy!

  5. You can store left overs in the fridge for a few days
