Courgette cheesy buckwheat muffins

Family friendly, quick, easy, nutritious, tried and tested.


-500g courgette grated (about 2 courgettes)

-150g cheese of choice grated

-3 eggs

-1 tbsp baking powder

-1 tbsp chia seeds (optional)

-A little under 1/2 cup oil (e.g. olive oil)

-4 tbsp buckwheat flour

-pinch of salt

-black pepper (optional to taste)


  1. Set oven to 200 degrees c.

  2. Mix the courgette, cheese, eggs and oil together

  3. Add the buckwheat flour, salt, pepper, chia seeds and baking powder

  4. Combine well

  5. Place into about 12 muffin cases

  6. Bake for 30-40 minutes

  7. Enjoy!
