Choc chip and peanut granola bars

Family friendly, quick, easy, nutritious, tried and tested.

Makes 8

-1 cup smooth peanut butter

-2/3 cup honey

-1 tsp vanilla extract

-1/2 tsp sea salt

-2 1/2 cups whole rolled oats

-1/3 cup mini chocolate chips

-3 tbsp crushed choice of nut/seeds

  1. Line an 8x8 baking pan with parchment paper

  2. In a large bowl stir together the peanut butter, honey, vanilla and salt

  3. Add the oats, chocolate chips and crushed seeds/nuts

  4. Stir to combine all the ingredients

  5. Press the mixture firmly into the pan

  6. Use a second piece of parchment paper to flatten the mixture

  7. Chill for 1 hour at least and then slice into bars

  8. Store in the fridge

  9. Enjoy!
