Chickpea, feta and spinach stew

Family friendly, quick, easy, nutritious, tried and tested.



-1 can/jar rinsed and drained chickpeas

-3 large tomatoes blended/1 tin chopped tomatoes

-1 stock cube (ideally low sodium, organic)

-1 tbsp cumin

-2 very large handfuls spinach (chopped small)

-Cubed feta cheese (quantity as desired)

-Chopped coriander (optional)

-Olive oil



1. Heat a tablespoon of olive oil in a deep pan

2. Add the cumin and mix with the oil

3. Once mixed and heated a little add the blended fresh tomatoes or the tin of chopped tomatoes and continue to mix

4. Add the chickpeas

5. Add the stick and enough water to cover the chickpeas and allow to heat

6. Add the chopped spinach and allow to wilt

7. Continue to add more water to make sure the mixture is covering the chickpeas and spinach

8. Add the feta and coriander and allow to simmer until cooked (about 25 minutes)

9. Serve as desired. I serve it with brown rice
