Broccoli potato bites
Family friendly, quick, easy, nutritious, tried and tested.
-1 large baking potato (about 350g)
-350g broccoli florets
-1 egg, beaten
-60g panko breadcrumbs
-50g cheese
-6 spring onions, chopped
-2 tablespoons buckwheat flour
-1 tablespoon thyme, chopped
-Spray olive oil (or spread onto the baking paper thinly)
Preheat oven to 180 degrees fan
Line a baking tray with non stick baking paper
Peal and steam cook the potato until tender
As it starts to feel tender add the broccoli to steam
Drain and leave to cool
Put the spring onions, flour, potato, broccoli, half the breadcrumbs, cheese, thyme, egg and flour in the mixer and whiz until finely chopped. Chill for 10 minutes
Put the remaining breadcrumbs on a plate. Shape the mixture into bites and roll in the breadcrumbs. Chill for another 10 minutes
Spray oil onto the baking paper and place the bites on top
Bake for 20-25 minutes and turn over halfway through the cooking time
